Roll out one ball of pie dough on a lightly floured surface to 12-inch diameter. Set aside for 30 minutes, stirring halfway through. To make the pastry, measure the butter and flour into a food processor and whiz until breadcrumb stage. Cover tightly with foil and roast for 15 minutes until just beginning to soften.
